I don&#8217;t really like chili. But I thought, &#8220;Let&#8217;s try a new recipe.&#8221; So I did.<\/p>\n<p>This was the <a href=\"http:\/\/www.realsimple.com\/food-recipes\/browse-all-recipes\/southwestern-beef-chili-corn-00000000006977\/?xid=dailyrecnews\">recipe<\/a>:<\/p>\n<ul>\n<li>1\u00a0tablespoon\u00a0olive oil<\/li>\n<li>2\u00a0carrots, chopped<\/li>\n<li>1\u00a0medium onion, chopped<\/li>\n<li>1\u00a0poblano or bell pepper, chopped<\/li>\n<li>1\/2\u00a0pound\u00a0ground beef<\/li>\n<li>2\u00a0tablespoons\u00a0tomato paste<\/li>\n<li>2\u00a015-ounce cans\u00a0black beans, drained and rinsed<\/li>\n<li>1\u00a0tablespoon\u00a0chili powder<\/li>\n<li>kosher salt and pepper<\/li>\n<li>1\/2\u00a0cup\u00a0corn kernels (from 1 ear, or frozen and thawed)<\/li>\n<li>1\/2\u00a0cup\u00a0grated Cheddar (2 ounces)<\/li>\n<li class=\"noBrd\">2\u00a0scallions, sliced<\/li>\n<\/ul>\n<p>This is what I ended up using:<\/p>\n<ul>\n<li><strong>2 tablespoon\u00a0olive oil<\/strong><\/li>\n<li><strong>5 skinny carrots, chopped<\/strong><\/li>\n<li>1\u00a0medium onion, chopped<\/li>\n<li>1\u00a0poblano or <strong>bell pepper<\/strong>, chopped<\/li>\n<li><strong>1.35 lb ground beef<\/strong><\/li>\n<li><span style=\"text-decoration:line-through;\">2\u00a0tablespoons\u00a0tomato paste<\/span> 5 tablespoons leftover sauce from the other night<\/li>\n<li>2\u00a015-ounce cans\u00a0black beans, drained and rinsed<\/li>\n<li>1\u00a0tablespoon\u00a0chili powder (TOO MUCH TOO MUCH TOO MUCH!)<\/li>\n<li>kosher salt and pepper<\/li>\n<li><span style=\"text-decoration:line-through;\">1\/2\u00a0cup\u00a0corn kernels (from 1 ear, or frozen and thawed)<\/span> 1\/2 bag frozen corn<\/li>\n<li>1\/2\u00a0cup\u00a0grated Cheddar (2 ounces)<\/li>\n<li class=\"noBrd\"><span style=\"text-decoration:line-through;\">2\u00a0scallions, sliced<\/span><\/li>\n<\/ul>\n<p>I tried to eyeball the veg, and see what I needed. Carrots are yum in chili (but not in salad, grated. I hate stringy carrots, they are sneaky) and the pepper was good. The onion was delicious, and sauce works great as a replacement for paste.<\/p>\n<p>All I can tell you is even though I kind of doubled some things and didn&#8217;t double others, one thing is for sure: I used <strong>too much<\/strong> chili powder. I thought since I was doubling the meat, some of the veg, and adding a little extra water, it would not be as spicy.<\/p>\n<p>Man, I was wrong. Jeff ate a bowl, but told me he might not be able to do it again. Which means I am stuck with a pot of chili I&#8217;m not in love with in the first place + it is too spicy.<\/p>\n<p>I must say, though, it is pretty tasty as far as chili goes.
