Assignment 53.

Check out this website. Some advice for  me:

To Jennie, age 14:

* Don’t listen to everything anyone tells you. Don’t believe too strongly in something just because your friends do.
* Listen to your mother. She’s right about them.
* Hang out with your sister more. She’s leaving to go to college, soon.

To Jennie, age 15:

* Don’t cry so much. Your life is pretty awesome.
* Tell your parents you love them more.
* Spend some more time with your girls.

To Jennie, age 16:

* Don’t stay with him for the summer just because your lockers are next to each other. You should really break up with him when you’re done with him. It’ll save heartache later.
* Don’t think you’re fat. Right now, you’re the skinniest you’re going to be. And even when you’re not as skinny, you’ll be happy. Because you’re beautiful.
* Focus when you go to NYC. You’ll remember every snowflake.

To Jennie, age 18:

* Break up before you go. Although you’ll miss some good times, you’ll thank me later.
* Don’t let him walk you home in September. It’ll be the start of heartbreak 4 years in the making.
* Don’t go to that party at K’s. Don’t let him be on the porch with you. Don’t let him tell you that he’d date you if only she didn’t exist. Don’t let him say he wishes she didn’t.
* It’s not your fault he died. Don’t let yourself believe it for a minute. Ever.
* Listen to your mother.

To Jennie, age 19:

* Don’t promise things you can’t to the people you love.
* Kiss him anyways. You won’t regret it.
* Kiss him, too. Ditto.
* Remember that your life is full of learning experiences. He loved you. Just not anymore.
* Listen to your mother.

5 Good Things: Friday Edition

Happy Friday all! Despite the fact that I feel like I might be getting sick, again, I have some good things to report:

1. Tomorrow is my team’s first volleyball game. Go, team, go!

2. My friends Cor & A are probably moving into the apartment below mine. It’s not for sure, but if it happens, it will mean more TV with Cor, and less time alone waiting for our boyfriend/husband to get home.

3. I bought a new bathing suit online today. It may or may not be bright pink.

4. I am going to Disney on Sunday with my girlfriends–woot!

5. It is 75 degrees out, and at lunch I’m going to read outside. And it will be wonderful.

Lasagna

I called my mom the other day, to ask her how to make a lasagna for Easter, and she said, “Oh, Jennie, you know I don’t work from recipes!”

So I had to make up my own.

Cheese mixture

  • 2 big containers of ricotta (they come in things that look like those large containers of yogurt you always think is a good idea to buy until you’re scrapping the bottom and have yogurt all over your hands)
  • 1/2 block mozzarella cheese (like a 3 x 3 inch block, if you will)
  • 2 eggs (I used large ones)
  • Handful of parm cheese

Plus:

  • 1 box lasagna box

Sauce

  • 4 containers of Roma tomatoes from Trader Joe’s (like 4 tomatoes each, so think 12 ish Roma tomatoes)
  • 3-4 cloves garlic
  • A handful of dried (or fresh) basil (ripped up or crushed up between your palms, to re-release the flavor.)
  • 4 cans tomato paste (the wee sized ones, I think 12 ounces? Smaller than a can of soup.)

1. Make sauce. (Put garlic with some olive oil in a pot, saute, add blended tomatoes, blend 4 cans tomato paste with 4 cans water in a bowl, add to pot, add basil.)

2. Put the cheeses and the eggs together. Save a little parm for the top of the lasagna.

3. Make the sheets. Heat oven to 350.

4. Layer: sheets, cheese, sauce. Until it’s at the top of the pan.

5. Cook for 45 minutes, ish.

6. Let set for at least 30 minutes.

7. Eat.
