SPICY Chili.

So I made some chili last night.

I don’t know what I was thinking. I don’t really like chili. But I thought, “Let’s try a new recipe.” So I did.

This was the recipe:

  • 1 tablespoon olive oil
  • 2 carrots, chopped
  • 1 medium onion, chopped
  • 1 poblano or bell pepper, chopped
  • 1/2 pound ground beef
  • 2 tablespoons tomato paste
  • 2 15-ounce cans black beans, drained and rinsed
  • 1 tablespoon chili powder
  • kosher salt and pepper
  • 1/2 cup corn kernels (from 1 ear, or frozen and thawed)
  • 1/2 cup grated Cheddar (2 ounces)
  • 2 scallions, sliced

This is what I ended up using:

  • 2 tablespoon olive oil
  • 5 skinny carrots, chopped
  • 1 medium onion, chopped
  • 1 poblano or bell pepper, chopped
  • 1.35 lb ground beef
  • 2 tablespoons tomato paste 5 tablespoons leftover sauce from the other night
  • 2 15-ounce cans black beans, drained and rinsed
  • 1 tablespoon chili powder (TOO MUCH TOO MUCH TOO MUCH!)
  • kosher salt and pepper
  • 1/2 cup corn kernels (from 1 ear, or frozen and thawed) 1/2 bag frozen corn
  • 1/2 cup grated Cheddar (2 ounces)
  • 2 scallions, sliced

I tried to eyeball the veg, and see what I needed. Carrots are yum in chili (but not in salad, grated. I hate stringy carrots, they are sneaky) and the pepper was good. The onion was delicious, and sauce works great as a replacement for paste.

All I can tell you is even though I kind of doubled some things and didn’t double others, one thing is for sure: I used too much chili powder. I thought since I was doubling the meat, some of the veg, and adding a little extra water, it would not be as spicy.

Man, I was wrong. Jeff ate a bowl, but told me he might not be able to do it again. Which means I am stuck with a pot of chili I’m not in love with in the first place + it is too spicy.

I must say, though, it is pretty tasty as far as chili goes. Maybe I do like chili, after all. I just have to have a bottle of water next to me… (picture to come.)

Riding the Metro, in L.A.

metro1For those of you who have seen the movie “Crash” you know that it’s a bit taboo to ride the public transit in L.A. Or, so I thought. I had been told that the subway exists, but most people seldom use it.

Well, today Jeff was on a film shoot, and I was going to be the only person in the office. How was I to get home? Well, I looked at a map of Pasadena, and determined it was only a mile and a half to the train station.

A mile and a half, I said to myself. Nothing. True, longer than the walk from my old apartment to school, but I could walk a mile and a half. I’m on my way to RUNNING one, for goodness sake.

So, today I wore my sneaks, and when 3:30 rolled around, I locked up the office, put my backpack on, and headed to the train. Luckily enough, I ran into K who also works at Poly, and he told me he was also on his way to the train! So off we went. He chuckled a little when I mentioned that a) I was going to walk and b) that I had never taken the metro. He takes it every day, over an hour each way, from way down by the water. That, my friends, is a hike.

Because I was with K, the walk was short. We got to the metro, he showed me how to buy a ticket, and off we went. He even switched to the same line I was switching to, which made it really easy. The metro is just as clean (and sometimes just as dirty) as Boston’s T, or Chicago’s El. I was surprised to learn it’s only $1.25 each ride, thank you very much. From my stop to the apartment it’s a mere half mile, which rounded my walk off to 2 miles. When I got home I wasn’t angry from driving, my back didn’t hurt from clenching, and I had learned a lot about my coworker and listened to some tunes.

It took about an hour and a half, and driving takes about an hour. But, exercise was about a half hour, so I’m pumped.

Maybe tomorrow I’ll take the train, too. Anything’s possible.

Welcome, Spring. Although it’s already 77 degrees here, I am still excited that you are coming tomorrow. I can hardly wait! In preparation for your arrival, I did a little research about the Sun.
DID YOU KNOW that the Sun moves a up a little in the sky, hence winter, spring, etc.? I mean, I guess I knew that, but I wasn’t sure what that exactly looked like. Now I do. Enjoy.

Five Good Things: Thursday edition.

Hi guys,

Nothing particular is happening today that is very exciting, so here are some good things:

1. Tonight is Bec’s photo shoot (70s style) which means I get to dress nice, throw some make up on, and model real pretty with some of my girls.

2.  I am listening to a new station on Pandora called “Ready to be: me.” It is mostly Sara Bareilles, and it is wonderful.

3.  I just got an email back from a man who said he could use volunteers for a new soccer program starting in the area for 4-10 year olds from April to June. To which I said, “Sign me up.”

4.  I have been looking for free lance writing jobs, and applied to some today, which is making me feel accomplished.

5. I am beginning to plan a Passover Seder and Easter Dinner party for my Jewish and Christian and non-religious friends to celebrate spring, and I am very excited.
